Atole de Elote is a delicious traditional Mexican drink usually enjoyed warm. This is a comforting beverage that is excellent on a cold day paired with tamales!

- corn - cinnamon stick - piloncillo - whole milk - cornstarch - vanilla extract - milk - cornstarch
Using whole milk adds a creamy texture, but you can make this dairy-free by using almond or oat milk.

In a small pot add cinnamon, water, and piloncillo to simmer for 3 minutes.

Add the corn and 2 cups milk to a blender and blend until smooth. Then strain it directly into the small pot, and 1 cup milk, and vanilla extract.

Make a cornstarch slurry by whisking together the cornstarch with the remaining 1 cup of milk. Slowly pour it into the pot and simmer for 10 minutes.

Remove the cinnamon stick from the pot and serve in your favorite mug!
