This Cucumber Salsa is easy to make and incredibly bright and refreshing! It’s perfect for eating with crispy tortilla chips or on tacos, enchiladas, and grilled meats.
This healthy and refreshing cucumber salsa is one of my favorite things to serve on hot summer days! It has been on repeat in my house for a few weeks now, and I just can’t get enough.
Similar to a pico de gallo, this salsa has all my warm-weather favorites like tomatoes, onions, jalapeños, lime juice, and cilantro. I added some diced cucumbers for a light and refreshing twist that’s perfect on lettuce wraps, all kinds of tacos, enchiladas, or simply with tortilla chips.
You’re going to want this salsa in your fridge all summer long.
Cucumber Salsa Ingredients
- Cucumber: The main ingredient that adds a fresh, light, and crunchy texture. I used a regular large cucumber, but you could use an English cucumber as well. I recommend peeling it.
- Roma tomatoes: I use Roma, but any kind of tomatoes would work.
- Red onion: I like the kick of a red onion, but a white onion would work.
- Cilantro: If you don’t like cilantro you can substitute it with mint or parsley.
- Jalapeño: For a touch of heat. Add more or less jalapeños depending on your spice tolerance.
- Limes: Lime juice adds a citrus flavor, making this salsa so good!
- Garlic: For added flavor that makes this salsa perfect for pairing with seafood, grilled meats, and in tacos.
- Olive oil: Brings together all the flavors and helps everything meld nicely.
How to Make Cucumber Salsa
- Mix ingredients: Toss together all the ingredients in a large bowl.
- Marinate: Cover and refrigerate for 30 minutes to let all the flavors meld together.
- Serve: Enjoy with tortilla chips or any dish that needs a hint of freshness and brightness.
Quick Tip
If you’re concerned about the spice level of this salsa, remove and discard the jalapeño seeds.
Substitute a poblano pepper if jalapeños are too spicy or a serrano pepper to add even more spice.

- Garlic press. This helps make minced garlic in seconds!
- Zester. This is another tool I love using to mince garlic. It’s easy to use and uses the entire garlic clove without leaving any behind!
- Mixing bowl set. These glass mixing bowls are easy to clean, come in multiple sizes, and can be used in the microwave and freezer.
Serving Suggestions

Storage
Cover the cucumber salsa and store it in an airtight container in the fridge for up to two days.

Ingredients
- 2 large cucumbers, peeled and diced
- 2 cups diced Roma tomatoes
- 1 cup diced red onions
- ⅔ cup chopped cilantro
- 2 jalapeño peppers diced
- 2 cloves garlic, grated or minced
- 6 tablespoons lime juice (about 2 large limes)
- 1 tablespoon olive oil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Combine the cucumbers, tomatoes, onions, cilantro, jalapeños, garlic, lime juice, olive oil, salt, and black pepper in a large bowl. Toss together to coat, taste, and season with more salt and black pepper as needed.
- Cover and refrigerate for 30 minutes to let all the flavors meld together.
- Serve with tortilla chips or on tacos, lettuce wraps, salads, fish, or any dish that needs a hint of freshness and brightness.
