Sticking to that New Years resolution to eat a little healthier just got easier thanks to this Healthy Turkey Fajita Rice Bowl recipe!
I’ve teamed up with my friends over at Honeysuckle White and Shady Brook Farms to create this protein and veggie-filled fajita bowl that’s perfect for lunch, dinner and meal prep. It’s made with a flavorful and bright cilantro lime cauliflower rice that’s insanely easy to make, sauteed peppers and onions for that Mexican fajita flavor and hot Italian turkey sausage links for lots of protein with a spicy kick.
Because this dish is made with all the veggies, it’s packed with tons of nutrients and is naturally gluten free, low carb and paleo-friendly.
Ingredients you’ll need
To make the fajita vegetables, all you need are 2 bell peppers of any color, 1 poblano pepper and 1 onion. I like to get peppers of all different colors so the bowl looks super appetizing (you eat with your eyes first!), but you can use whatever color you have on hand. If you can’t find poblanos at your grocery store, you can substitute a bell pepper instead.
To make the cilantro lime cauliflower rice, lightly pulse cauliflower florets in a food processor until it resembles rice and place it in a microwave-safe bowl. Microwave it on high with a little water for 3 to 4 minutes and then mix it together with some chopped cilantro, lime juice and salt.
Load up on good protein
Last but definitely not least, the star of these fajita bowls are the Hot Italian Turkey Sausage Links from Honeysuckle White. They’ve got a little kick to them which pairs perfectly with the peppers and onions and they’re a great source of protein without all the excess fat.

Meal prep and freezer friendly
Not only is this recipe ready in 35 minutes or less, but it’s also great for meal prepping lunches ahead of time or freezing for later.
If you’re making these for lunch throughout the week, just portion out the recipe into microwave-safe containers (these are my favorite) and keep them in the fridge up to 5 days until you’re ready to eat!
If you’ve got some leftovers that you want to freeze, portion out the bowls like normal and place them in freezer-safe containers or storage bags. When you’re ready to eat, remove them from the freezer and warm them up in the microwave. Easy peasy!

Ingredients
For the sausage and peppers
- 3 tablespoons olive oil, divided
- 1 20-ounce package Honeysuckle White Hot Italian Turkey Sausage Links, cut into coins
- 1 teaspoon minced garlic (about 2 cloves)
- 2 bell peppers, thinly sliced (any color)
- 1 poblano pepper thinly sliced
- 1 medium yellow onion, thinly sliced
- 1 teaspoon kosher salt
- 1/4 teaspoon cumin power
For the Cilantro Lime Cauliflower Rice
- 1 small cauliflower, cut into small florets
- 1/3 cup water
- 1 teaspoon kosher salt
- 1/3 cup minced cilantro
- 1 1/2 limes juiced (about 3 tablespoons)
Instructions
For the sausage and peppers
- Heat a large saute pan over medium-high heat. Add 2 tablespoons of olive oil.
- Add the sausage coins and cook until sausage is browned and fully cooked through, about 5 minutes per side. Remove sausage from pan and transfer to a large bowl. Set aside.
- In the same saute pan, add remaining tablespoon of olive oil and minced garlic. Cook for 30 seconds, until garlic is fragrant.
- Add bell peppers, poblano pepper, onions, salt and cumin powder. Cook for 10 minutes, stirring occasionally, until the veggies are soft.
- Add the cooked sausage back to the pan and mix together with the cooked veggies. Reduce heat to very low and keep warm until ready to serve with the Cilantro Lime Cauliflower Rice.
For the Cilantro Lime Cauliflower Rice
- Lightly pulse florets in a food processor until it resembles rice or grate cauliflower using a large cheese grater.
- Place cauliflower rice into a large microwave-safe bowl. Add water, salt and mix together. Microwave on high for 3-4 minutes.
- Add cilantro and lime juice. Mix together and serve with turkey sausage and pepper.
