Alfajores are delicious, crumbly sandwich cookies with dulce de leche in the middle, dusted with powdered sugar, and optionally rolled in shredded coconut.

- eggs - butter - flour - sugar - dulce de leche - lemon zest - corn starch - baking soda - baking powder - vanilla extract - powdered sugar - shredded coconut
Mix the dry ingredients, and set aside. Cream the butter and sugar until pale yellow. Then add eggs, vanilla extract, lemon, and dry ingredients.

Shape dough into a ball and chill for 1 hour. Roll out the dough and cut 2-inch circles. Bake cookies for 11 minutes and allow to cool for 15 minutes.

Assemble cookies by spreading dulce de leche on the bottom half and placing another on top.

Roll the sides on a plate with the shredded coconut, dust with powdered sugar, and enjoy!
