In the stand mixer bowl, cream shortening and sugar together until light and fluffy. Mix in wet ingredients, then mix in dry ingredints.

Allow dough to chill for 1 hour in the fridge. Then roll out dough and stamp out cookie shapes. Bake for 10 minutes and then allow to cool.

Once they are cool to the touch, roll them in the cinnamon sugar and serve!
