- olive oil - pork shoulder - sweet potatoes - poblano pepper - diced tomatoes - black beans - red kidney beans - chipotle peppers - red wine vinegar - yellow onion - fish sauce - garlic - salt & pepper - seasonings - your favorite toppings

Heat the olive oil in a large pot. Add the onions and cook for 10 minutes. Add the garlic and cook for 30 seconds until fragrant. Add the seasoned pork and cook for 10 minutes.

Add diced tomatoes, both beans, chipotle peppers, vinegar, fish sauce, and seasonings. Cover then cook for 1 1/2 hours. Add the sweet potatoes and poblanos. Cover and cook for 30 more minutes.

Serve in bowls topped with cilantro, sour cream, and avocado slices!
