ENSALADA DE POLLO

Ensalada de Pollo (or Mexican Chicken Salad) is an easy-to-make meal that’s always a crowd-pleaser!

- potatoes - vegetables - shredded chicken - mayonnaise - sour cream - Mexican crema - lime juice - pickled jalapeño brine

Ingredients Needed

Serve the salad with pickled jalapeño slices to add heat to each bite.

In a saucepan cook potatoes until tender soft. Cook vegetables until fully cooked through.

Whisk the mayonnaise, sour cream, Mexican crema, lime juice, pickled jalapeño brine, and salt together in a small bowl until they’re well combined.

In a large bowl, add the cooked potatoes, thawed mixed vegetables, shredded chicken, and dressing.

Refrigerate for 1 hour until chilled then serve and enjoy!
