Add potatoes and cook everything for 5 more minutes. Make the dough by mixing masa harina, water, and salt. Form the dough into balls and flatten.

Place the flattened dough in a hot skillet and cook for about 2 minutes, flipping every 15 to 30 seconds. Let gorditas cool, then cut a slit down the edge of the tortilla to create a pocket.
