- olive oil - can black beans - vegetable broth - diced onion - plum tomatoes - garlic - seasonings - your favorite toppings

Ingredients Needed

Store the soup in the fridge for up to 5 days in an airtight container.

*Quick Tip!*

Sauté the onions, garlic and tomatoes until the onions have softened. Stir in seasonings sauté for  4 minutes.

Use an immersion blender and blend until smooth.  Cook uncovered for another 5-10 minutes,  until the soup reaches  your preferred thickness.

Serve with optional toppings like diced avocados, queso fresco, chopped cilantro and lime juice!
